De Barbera d'Asti Superiore "Bionzo" is een uitstekende vertegenwoordiging van het potentieel van de Barbera druif, afkomstig uit de gewaardeerde Asti regio van Italië. Deze wijn belichaamt de essentie van traditie en innovatie en toont het nauwgezette vakmanschap van zijn makers. Met zijn diepe robijnrode kleur en complexe aroma's van donkere kersen, bramen en subtiele kruidige noten, betovert "Bionzo" de zintuigen vanaf het eerste glas.

Bodem: klei-kalkhoudend, kalkhoudend-kiezelhoudend

Blootstelling en hoogte: oost/zuidoost – 320 m

Max. oogst/hectare: 70 kwintaal/hectare

Oogstperiode: tweede week van september

Ophalen: 100% met de hand in kleine doosjes

Kweeklocatie: Bionzo (Costigliole d'Asti)

 

Vinificatie: zachte persing en ontsteeling, koude maceratie gedurende 48 uur en déléstage, gisting en maceratie op de schil gedurende ca. 20 dagen bij een gecontroleerde temperatuur (26°C). De most wordt minstens 5 keer per dag overgepompt om de
van de kleur en de aroma's van de druivensoort te verbeteren. De
malolactische gisting wordt direct na de alcoholisch.
Rijping: 12 maanden rijping waarvan 6-8 maanden op hout

 

WIJNKENMERKEN
Kleur: intens robijnrood met violette en paarse vonken.
Neus: rijk en diep, met rood rijp fruit zoals bramen, pruimen en kersen en jam van rode vruchten; vervolgens bereiken specerijen en tabak de oppervlakte waardoor een zacht evenwicht ontstaat tussen balsamico en fruitige noten.
Smaak: vol en goed gestructureerd, ondersteund door een
goede zuurgraad die zorgt voor een soepele en fluwelen
evenwicht creëert.
Bewaren: 15 jaar of langer, afhankelijk van het oogstjaar
Serveertemperatuur: 18/20° C.
Gastronomie: smakelijke soepen, rood vlees en gevogelte in
aromatische stoofschotels, gegrild rood vlees, stokvis en gezouten
kabeljauw, gerijpte kazen, maar ook chocolade en droge vruchten
